Abstract

This study aims to determine the shelf life of shredded catfish (Pangasius sp.) products in polyethylene (PE) vacuum packaging and the effect of storage temperature on the quality of shredded catfish. This study used an experimental laboratory method, to determine the shelf life of shredded catfish (Pangasius sp.) through the Arrhenius approach at storage temperatures 25℃, 40℃, and 55℃, observed every 5 days for 20 days and repeated 3 times. The parameters observed in this study were the analysis of water content, ash content, protein content, fat content, carbohydrate content, water activity (aw), and free fatty acids. The resulting data will be analyzed using the linear regression method in the Microsoft Excel program for estimating the shelf life of shredded catfish. The results showed that the proximate content of the shredded catfish met the requirements of SNI shredded fish No 690.1: 2013, with a moisture content of 2.79%, ash content of 3.67%, fat content of 34.59%, protein content of 45.50%, and carbohydrate content of 13.45%. The water activity values on the 20th day at temperatures of 25°C, 40°C, 55°C, were of 0.45, 0.48, and 0.51 respectively. The FFA value of shredded catfish on the 20th day at 25°C reached 0.22%, 40°C became 0.35%, and 55°C reached 0.42%. The shelf life of shredded catfish at a storage temperature of 25°C, 40°C, 55°C, is for 28 months, 16 month, dan 9 months respectively.
