Abstract
The purpose of this research was to know the performance test of vacuum drying using water steam heat sources and pineapple fruit as a testing material. This research was conducted in September 2018 until December 2018 at the Biosystem Laboratory of the Agricultural Technology Department, Faculty of Agriculture, Sriwijaya University. This research applied experimental method and the data presented in the tables and graphic. The study had three times repetitions at 40 °C of temperature. The observed parameters were water content, evaporated water mass, drying rate, analysis of heat requirement during the process, analysis of heat energy loss during the process and drying efficiency. The results showed that vacuum dryer with controlled temperature and pressure had water content in the amount of 18.78 %, 18.18 % and 20.12 % for each repetition 14.74 %/hour. Drying efficiency from each repetition was 10.04 %, 7.80 % and 10.44% results.
