Abstract
Tujuan penelitian adalah mempelajari pengaruh pengurangan air bubur timun suri dan penambahan tapioka (bahan pengisi) terhadap karakteristik kimia, fisik dan organoleptik fruit leather timun suri (Cucumis melo L.). Penelitian dilaksanakan pada bulan Februari 2010 sampai Mei 2010 di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya. Penelitian ini menggunakan metode Rancangan Acak Lengkap Faktorial terdiri dari dua faktor dan tiga ulangan untuk masing-masing perlakuan. Faktor perlakuan pertama adalah konsentrasi pengurangan air bubur timun suri (30%, 40%, dan 50%) dan faktor perlakuan kedua adalah konsentrasi penambahan tapioka (0%, 0,25%, 0,5%, 0,75%, dan 1%). Parameter yang digunakan adalah kadar air, kadar abu, tekstur, wama, dan uji hedonik. Hasil penelitian menunjukkan bahwa pengurangan air bubur timun suri berpengaruh nyata terhadap tekstur, kadar air, wama {lightness, chroma, dan hue) fruit leather. Konsentrasi penambahan tapioka (bahan pengisi) berpengaruh nyata terhadap tekstur, kadar air, kadar abu, wama (lightness, chroma, dan hue) fruit leather, sedangkan interaksi pengurangan air bubur timun suri dan penambahan bahan pengisi berpengaruh nyata terhadap kadar air. Hasil uji hedonik menunjukkan bahwa skor rata-rata untuk tekstur, wama, aroma, dan rasa adalah 3,64, 3,92, 3,44 dan 3,36, berturut-turut. Fruit leather A3B2 (pengurangan air bubur timun suri 50%, bahan pengisi 0,25%) merupakan perlakuan terbaik berdasarkan uji hedonik dengan tekstur 1179,13 gf, kadar air 7,51 %, kadar abu 0,36 %, lightness 52,27%, chroma 16,20%, dan hue 87,97°.
