Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh cara pengeringan Penelitian ini dilaksanakan di terhadap karakteristik daun salam kering. Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Fakultas Pertanian Universitas Sriwijaya, Indralaya. Penelitian ini dilaksanakan pada bulan April sampai dengan Juni 2014. Penelitian ini menggunakan rancangan acak kelompok dengan empat perlakuan dan empat kali ulangan. Perlakuan yang pertama adalah pengeringan dengan cara diangin-anginkan. Perlakuan ke dua yaitu pengeringan dengan sinar matahari. Pengeringan yang ke tiga yaitu pengeringan oven dengan suhu 45°C selama lima jam. Pengeringan yang ke empat yaitu pengeringan kombinasi sinar matahari (5 jam) dan oven suhu 45°C (2 jam). Parameter yang dianalisa adalah rendemen, warna, indeks kelarutan air, kadar air, indeks kecoklatan, total fenol dan kadar tanin. Hasil penelitian menunjukan bahwa cara pengeringan berpengaruh nyata terhadap rendemen, warna (redness), indeks kelarutan air, kadar air, indeks kecoklatan, total fenol dan kadar tanin daun salam kering. Perlakuan terbaik adalah pengeringan dianginanginkan dengan nilai rendemen 48,59 %, warna (redness) 0.725, indeks kelarutan air 40,35 %, kadar air 13,08 %, indeks kecoklatan 0,91, total fenol 206,32 mg/L dan kadar tanin 161,66 mg/L. ditemukan pada ikan Kembung.
