Abstract

Indonesia is an agricultural country with vast land and abundant biodiversity. Agriculture has an important contribution both to the economy and to the fulfillment of basic needs of society, especially with the increasing population, food demand will increase. But in fact, Indonesia is still experiencing food diversification, one of which is triggered by the rapid growth of population so that the government's goal to achieve food security is hampered. At this time globally in various countries are experiencing a crisis. One potential crisis that has a serious impact is the threat of global food crisis. Efforts to food security is increasingly difficult to do without accompanied by food waste prevention efforts (food waste), which tends to increase. Food waste (food waste) is the loss of food that occurs at the end of the food chain from the sales process to the final consumption associated with the seller and consumer behavior. Every year, it is estimated that one third of all food produced for human consumption is lost or wasted around the world. The amount of food value is not consumed either in the form of rice, domestic chicken, tilapia, carp, beef, and vegetables. In both sample restaurants have a total of 0,255386 kg per day, while the economic value of food consumed per day from both restaurants is Rp. 15.562,2. And within a year is estimated economic value is not consumed is Rp. 5.680.203. Based on secondary data from the Office of Food Security and Agriculture Agency it can be seen that with the production of economic value of all categories produce a total projection of economic value of Rp 51.865.960.000 per year. With the difference between the economic value of food waste with the economic value of Prabumulih City production is Rp -751.850.098.604 .
