Abstract

This study aimed to study the effect of different concentrations of pineapple peel juice and incubation time on the physicochemical characteristics of virgin coconut oil (VCO). This study used a Factorial Completely Randomized Design (CRD) with one treatment factor, namely differences of concentration of pineapple juice 20%,25% and 30%, while incubation time was 24 hours and 48 hours. Each treatment was repeated three times. Parameters observed included yield, water content, free fatty acids, peroxide value, clarity and viscosity. The results showed that concentration of pineapple peel juice had significant effect on the yield, water content, free fatty acids and clarity, while incubation time had significant effect on viscosity. Interaction of concentration of pineapple peel juice and incubation time significantly affected the levels of free fatty acids. Based on the physicochemical characteristics, treatment with a concentration of 20% pineapple peel juice and 24 hours of incubation time was the best treatment with yield value 17.03%, water content 0.11%, free fatty acids 0.10%, peroxide number 1.94 meq/kg, clarity 72.00% and in accordance with the Indonesian National Standard (SNI).
