Abstract

Penelitian ini bertujuan untuk mengetahui karakteristik edible film dengan perbedaan konsentrasi glukomanan porang dan gliserol. Penelitian ini telah dilaksanakan pada tanggal 11 Januari sampai 11 Februari 2023 di Laboratorium Kimia Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya dan Laboratorium Kimia Jurusan Teknik Kimia Politeknik Negeri Sriwijaya, Palembang. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) faktorial dengan dua faktor perlakuan dan setiap perlakuan diulang sebanyak dua kali. Faktor A, yaitu konsentrasi glukomanan (1%, 2% dan 3%) dan faktor B, yaitu konsentrasi gliserol (1%, 2% dan 3%). Data diolah menggunakan analisis keragaman (ANOVA), perlakuan yang berpengaruh nyata diuji lanjut menggunakan uji Beda Nyata Jujur (BNJ) 5%. Hasil penelitian menunjukkan bahwa konsentrasi glukomanan berpengaruh nyata terhadap ketebalan, kuat tarik dan transmisi uap air, sedangkan konsentrasi gliserol berpengaruh nyata terhadap ketebalan, kuat tarik, persen pemanjangan, transmisi uap air dan kelarutan dalam air. Perlakuan terbaik terdapat pada perlakuan A3B2 (konsentrasi glukomanan 3% ; gliserol 2%) dengan karakteristik nilai ketebalan 0,178 mm, kuat tarik 0,3337 Mpa, persen pemanjangan 35,833%, transmisi uap air 4,382 g.m-2. hari-1 kelarutan dalam air 50,595% dan kuat tekan 59,667 gf.
