Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh penambahan bubuk daun kopi dan bubuk daun stevia terhadap karakteristik kimia dan organoleptik minuman fungsional teh daun gambir. Penelitian ini dilaksanakan dari tanggal 06 Desember 2022 - Juli 2023 di Laboratorium Kimia, Sensoris, dan Pengolahan Hasil Penelitian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya. Penelitian ini menggunakan metode Rancangan Acak Lengkap (RAL) non-faktorial, dengan perlakuan formulasi yaitu formulasi teh daun gambir, bubuk daun kopi dan bubuk daun stevia. Setiap perlakuan adalah sebagai berikut: 100% teh daun gambir: 0% bubuk daun kopi : 0% bubuk daun stevia; 95% teh daun gambir : 1,5% bubuk daun kopi : 3,5% bubuk daun stevia; 90% teh daun gambir : 3% bubuk daun kopi : 7% bubuk daun stevia; 85% teh daun gambir : 4,5% bubuk daun kopi : 10,5% bubuk daun stevia; 80% teh daun gambir : 6% bubuk daun kopi : 14% bubuk daun stevia. Parameter yang diamati pada penelitian ini, yaitu karakteristik kimia (aktivitas antioksidan, total fenol, pH larutan, kadar air dan kadar abu) dan organoleptik (warna,aroma dan rasa). Hasil penelitian menunjukkan bahwa penambahan bubuk daun kopi dan bubuk daun stevia dalam pembuatan teh daun gambir berpengaruh nyata terhadap aktivitas antioksidan, total fenol, pH larutan dan kadar air. Perlakuan terbaik adalah formulasi dari 80% teh daun gambir : 6% bubuk daun kopi : 14% bubuk daun stevia dengan karakteristik nilai aktivitas antioksidan sebesar 36,56 ppm; total fenol sebesar 376,5 mgGAE/g; nilai pH larutan sebesar 5,68; kadar air 10,04% dan kadar abu 2,61%.
