Abstract
The objective of this research was to determine the effect of material ratio to solvents and extraction time on the antimicrobial activity of Torch Ginger flower water extract (Nicolaia speciosa). This research used a Factorial Completely Randomized Design (RALF) with two treatment factors, named factor A (material ratio to solvents) which consisted of three levels of treatment and factor B (extraction time) which consisted of three levels of treatment. Each treatment was repeated three times. The parameters observed in this research include analysis of total phenol content, moisture content and antibacterial activity. The results showed that material ratio to solvents and extraction time had a significant effect on total phenol content, moisture content, and antibacterial activity. As supporting data of Torch Ginger flower were also observed water content, rendemen, moisture content and total phenol content which had successive values (70,24%, 23%, 5,12 dan 20,26 mg/L). The ratio of material to solvents (1: 5) (A1) with extraction time for 2 days (B2) is the best treatment.
