Abstract

Fresh fruit is one of main needs in family. Maintaining fruit freshness using low temperatures is a food safety solution. Thermoelectric cooling has advantage of being environmentally friendly because not use CFC. The purpose of this study was to obtain coefficient of performance (COP) and see the mass loss and temperature effect on the shelf life of citrus fruits. This research uses experimental methods, by making direct observations to obtain causal data through experiments. The best COP value in the small cooling box variation using a fan. The COP of TEC1 module can reach a value of 0.219, while the COP of the TEC2 module has a value of 0.192. The lower the cold side temperature of the TEC does not guarantee better Coefficient of Performance (COP) results. It can be seen the comparison between the COP of TEC1 module small box variation using fan and without using fan. The variation without fan has cold side temperature of 4.63°C and hot side of 48.21°C so that the COP value is 0.106. Meanwhile, the small box variation with fan has cold side temperature of 8.97°C and hot side of 49.98°C resulting in a COP value of 0.219. Fruit experienced decrease in mass due to decreased water content due to evaporation heat in the fruit. It was obtained that the percentage of fruit weight loss was 7.3% after being cooled at an average box temperature for 3 days was 21.70°C.
