Abstract
The case of finding the content of borax in tapioca jangek is a threat to the health of humans who consume it. In addition to paying attention to the food ingredients to be used, the application of sanitation at other stages in the process of making tapioca jangek crackers also needs attention to avoid various factors that can cause contamination that causes poisoning. The purpose of this study was to analyze the application of sanitation in the tapioca jangek cracker industry in Kota Negara Ward. This study uses descriptive qualitative methods with observation, in-depth interviews, and documentation. The number of informants in this study were 5 key informants and 8 regular informants. The results showed that the selection of materials made by all IRTs had been implemented but found the use of food additives which had been banned by the health service. Material storage carried out by all IRTs is in a location that has the possibility of contamination. Crackers procesing by all IRTs still uses equipment made of wood and a processing site that is not spared from the possibility of contamination. There was 3 IRTs that store finished crackers at inappropriate temperatures. Transportation of jangek crackers using non-special vehicles. The presentation of jangek crackers by all IRTs used clean plastic but did not attach important labels and information such as expiration dates and did not register product distribution permits with BPOM. The conclusion of this study is that the application of sanitation is still not optimal by all jangek tapioca crackers IRT in the manufacture of crackers, especially in the use of crystalline canned food ingredients which should not be done. This study help the industry to repair application of sanitation and replace the use of crystal cans with baking soda, or use straw ash water, or Sodium Tripoliphosphate (STPP).
