Abstract

The objective of the research was to analyze the effect of carrageenan and dextrin addition on the physical, chemical and sensory characteristics of the corn (Zea mays L.) sheet-jam. The research was conducted at Chemistry Laboratory of Agricultural Product and Sensosry Laboratory, Agricultural Technology Department, Faculty of Agriculture, Sriwijaya University, from August 2017 to April 2018. The research used a Completely Randomized Factorial Design with two factors and each treatment was repeated three times. The first factor was gelling agents (carrageenan and dextrin) and the second factor was the concentration of gelling agents [2.5%; 3.0%; 3.5%]. The parameters were physical characteristics (texture and color), chemical characteristics (moisture contents and total dissolved solids) and hedonic test (color, flavor, taste, and texture). Results showed that gelling agents had significant effect on texture (hardness), L*, b*, moisture content and total dissolved solids, the concentration of gelling agent had significant effect on moisture content and total dissolved solids, while the interaction between gelling agents and the concentration of gelling agents had no significant effect on all observed parameters. Based on some chemical properties and hedonic test, the best treatment was A1B1 (carrageenan 2.5%) with the hardness of 15.69 gf, L* 52.88%, a* +9.79, b* +32.69, moisture contents 23.10%, total dissolved solids 62.21% and hedonic scores for color, flavor, taste and texture were 3.2; 3.24; 3.2 and 3.2, respectively.
