Abstract

The objectives of this research are (1) to study the production process and marketing system of shrimp crackers in Sungsang I Village, Banyuasin II District, Banyuasin Regency, (2) to calculate the cost of shrimp crackers in Sungsang I Village, Banyuasin II District, Banyuasin Regency, and (3) to calculate the profit or added value after processingshrimp into cracker products. This research was conducted in Sungsang I Village, Banyuasin II District, Banyuasin Regency. Data were collected from December 2022 to January 2023. The method used is a survey method that collects information from a sampleby asking through questionnaires or other tools that contain questions related to the research. The sampling method used in this study is the census sample method where all sampling units in the population are sampled. The data collected in this study are primary data and secondary data. The results of this study indicate that the average raw material is obtained from the sungsang market and sungsang fishermen. The processing of shrimp into crackers goes through several stages of production including preparation of raw materials, making basic dough, forming dough, cutting to form crackers, drying or drying and packaging. Crackers in Sungsang I Village, Banyuasin II Subdistrict, Banyuasin Regency can be purchased directly at the location where the crackers are made or can also be ordered in advance if the purchase is in large quantities. There are two ways to deliver crackers in Sungsang I Village, Banyuasin II Subdistrict, Banyuasin Regency, namely directly delivering crackers to consumers or waiting for consumers to come directly to the cracker production site. The cost of goods obtained in this research on meatball processing in Sungsang I Village, Banyuasin II Subdistrict, Banyuasin Regency is Rp53,050. The value-added ratio obtained in processing shrimp into crackers is 49% so that based on the criteria for determining the level of value-added ratio, this cracker processing produces high added value, which is between >40%.
