Abstract
The objective of this research was to determine the physical, Chemical, and characteristics of sweet potato bread. This research was conducted at Chemical Laboratory of Agricultural Product, Agricultural Technology Department, Agricultural Faculty and Bioprocess Laboratory of Engineriing Faculty, Sriwijaya University from February 2010 to June 2010. The research was arranged in a Factorial Completely Randomized Design with two treatments and three replications. The treatments were the variety of sweet potato (white, orange and purple) and the added proportion of sweet potato (10%, 20% and 30%). The parameters were the physical characteristics (expansion degree, pore size, colour and texture), Chemical characteristics (water content, ash content, sensory protein content, and fiber content), and sensory characteristics included hedonic test (colour, odour, taste and texture) and simple different test (colour, odour, taste and texture). The results showed that the variety of sweet potato and the added proportion of sweet potato had significant effect on the ash content, expansion degree, chroma, hue and texture. Based on the hedonic test, the treatment of AiB2 (white sweet potato and the added proportion of sweet potato 20%) was the most prefered treatment with expansion degree of 74.74%, pore diameter of 28.33 pm, lightness 72.80%, chroma 33.09%, hue 84.03° and texture 20.00 gf, water content 20.59%, ash content 1.64%, protein content 7.86% and crude fiber 14.83%. The results of the simple different test revealed that the treatment of A1B2 (white sweet potato and the added proportion of sweet potato 20%) was similar to the control (without the addition of sweet potato) for its odour, taste, colour and was different to the control for texture.
