Abstract
The aim of this research was to analyze thecharacteristics of modified dioscoreafiour which was processed by fermentation. The modification The research was conducted at the was to increase the protein content of the flour. Laboratory of Agriculture Product Chemistry, Department of Agricultural Technology, Faculty of Agriculture, University of Sriwijaya, Indralaya from October2011 until Juni2012. The research used Factorial Block Randomized Design with two factors as treatments. Each combination was repeated three times. The factors were the type of starter (A, : bread starter, A2 : fermented cassava starter) and the concentration of starter (Bi : 3%, B2 : 5%, B3 : 7%). The parameters observed were yield, moisture content, protein content, viscosity, colour measurement, temperature and time of gelatinization, starch solubility in water, total of microbia, total sugar, and levels of cyanide. The results showed that the addition of starter types hadsignificant effect on moisture content, lightness, chroma, hue, viscosity, and protein levels. concentration of starter had significant effect on the lightness, hue, gelatinization temperature, viscosity, total microbes, the levels of protein, and total sugar content. Interaction of the two factors had significant effect only on levels of cyanide and The viscosity.The treatment of A2 B3 (fermented cassava starter and the concentration of starter for 7%) was found to be the best treatment with the characteristics of lightness 93.30%, 80.60 hue, the solubility of 23.60%, 8.35 total microbial Log CFU/g, protein content 4.46% , total sugar content6.17%, cyanide content 38.36 ppm.
