Abstract

The objective of the research was to analyze the effect of consentration starfruit juice on the physical, chemical and sensory characteristics of hard candy. The research was conducted at Chemical of Agricultural Product Laboratory and Sensory Laboratory, Agricultural Technology Department, Agricultural Faculty, Sriwijaya University, from Maret 2018 until Agustus 2018. The research used a Non Factorial Completely Randomized Design, each treatment was repeated three times. The parameters were color, moisture contents, ash contents, reducing sugar, vitamin C and antioxidant activity and hedonic tests (color, taste and texture). The results showed that with using the consentration of starfruit juice up to 100% can increase redness, moisture contents, ash contents, reducing sugar, vitamin C, but decrease lightness, yellowness and IC50. Based on hedonic tests the most favored sample by panelists on A6 treatment (concentration of 100% starfruit juice) with score color was 3,48 categorized as like and for score taste was 3,00 categorized as like. Hard candy with the consentration of 100% starfruit juice (A6) was the best treatment based on chemical characteristics (vitamin C and antioxidant activity) and hedonic tests (color and taste) with the physical characteristic (L* 33.97%, a* 10.15 dan b* 2.80), chemical characteristics (moisture contents 2.29%, %, ash contents 0.42%, reducing sugar 22.75%, vitamin C 6.02 mg/100 mL and antioxidant activity (IC50) 520.27 ppm) and hedonic tests on color and taste categorized as like.
