Abstract
Penelitian ini adalah untuk mengetahui kualitas fisik daging sapi Brahman Cross jantan yang diberi pakan limbah industri kelapa sawit. Penelitian ini dianalisis di Laboratorium Ruminansia Besar Fakultas Peternakan Institut Pertanian Bogor pada bulan Maret sampai dengan April 2014. Penelitian ini menggunakan analisis data Deskriptif Metode Nazir (2005) dengan membandingkan kualitas fisik daging sapi yang diberi pakan limbah industri kelapa sawit dengan daging sapi yang hanya diberi pakan hijauan biasa dan konsentrat komersial pada sapi Brahman Cross jantan. Parameter yang diamati meliputi nilai pH daging, daya ikat air, keempukan, dan susut masak daging sapi Brahman Cross jantan pada bagian Round. Hasil penelitian menunjukan bahwa pemberian pakan limbah industri kelapa sawit terhadap sapi Brahman Cross jantan bila dibandingkan dengan penelitian Brahmantiyo (2000) maka data yang didapat tidak terlalu berpengaruh dengan kualitas fisik daging dengan rataan nilai pH 5,53, %mgH20 daya mengikat air 32,94%, keempukan 3,2 kg/cm3, dan susut masak sebesar 43,55%. Sehingga bisa dikatakan bahwa daging sapi Brahman Cross jantan yang diberi pakan limbah industri kelapa sawit aman untuk dikonsumsi. diberi pakan limbah industri kelapa sawit.
