Abstract

The research objective was to analyze decision making system to optimize postharvest handling of fruits and vegetables in several self-service markets at Palembang using Analytical Hierrarchy Process (AHP) method. The research involved three self-service markets at Palembang, namely Carrefour, Makro, and Superindo, done from February to August 2005. This study systematically collect data using questionnaires filled by five different respondent groups. These groups were govemment agencies related to postharvest handling of fruits and vegetables, self-service market officers, suppliers, and experts in fruits and vegetables handling. The Analytical Hierrarchy Process was done in four levels and applied to analyze postharvest handling of fruits and vegetables in the self-service market. Level 1 hierrarchy focused on postharvest handling system of fruits and vegetables in the self-service market. Level 2 hierrarchy showed that the most responsible actor was industrialist with value of 0.246. The other responsible actors were farmers with value of 0.210, suppliers/ transporters with value of 0.138, self-service officers with value of 0.123, Dinas Perdagangan dan Perindustrian with value of 0.101, Departemen Pertanian with value of 0.096, and Badan Pengawas Obat dan Makanan with the lowest value of 0.087. Level 3 hierrarchy determined that the most responsible factor was govemment regulation with value of 0.206. Hygiene with value of 0.189, storage life of the product with value of 0.172, image of the company with value of 0.149, the image of product with value of 0.145, and the prestige of consumer with value of 0.142. Level 4 hierrarchy showed that the packaging was the most important strategy of the postharvest handling system of fruits and vegetables in the self-service market with value of 0.298. Sortation with value of 0.227, cooling with value of 0.203, grading with value of 0.135, and trademark with value of 0.135 were the other strategies that affecting postharvest handling of fruits and vegetables in the self-service markets.
