Abstract

This research is puposed to utilize the waste of fish snakehead (channa striata) visceral waste to become protein hydrolyzate which have antioxidant activity. This research was held from January to August 2018. This study used laboratory experiment methods and descriptive data analysis. The treatment used was the concentration of protease enzymes by 10%, 20%, 30% and 40% and 6 hours hydrolysis time. The results showed that the protein hydrolyzate of fish visceral organs had a value of hydrolysis degree which increased with increasing concentration of the enzyme given, from 18.9% to 70.3%. Peptide levels have values from 22.68% to 32.76% and also increase. protein levels have increased up to 30% enzyme concentration, decreasing at 40% enzyme concentration. Antioxidant activity also increased at 30% enzyme concentration and decreased to 40% enzyme concentration. The highest protein content was 43,623 mg / mL, the highest peptide level was 32.76 and the percentage of antioxidant inhibition had the highest value of 66.06%.
