Abstract

The objective of this research was to determine the effects of mung bean (Phaseolus radiatus L.) flour addition on physical, Chemical and sensory characteristics of cookies. The research was conducted at the Laboratory of Chemistry of Agricultural Product, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, Indralaya, ffom July 2011 to February 2012. This research was arranged in non Factorial Completely Randomized Design with five treatments and three replications for each treatment. The treatments were the addition of mung bean flour with the concentration of Ao (control), A\ (mung bean flour 30%), A2 (mung bean flour 40%), A3 (mung bean flour 50%), and A4 (mung bean flour 60% ). The observed parameters were the physical characteristics (degree of swelling and texture), Chemical characteristics (water content, ash content, and protein content) and sensory characteristics by using hedonic test for the attribute of texture, taste, odor, and colour. The results showed that addition of mung bean flour had significant effects on degree of swelling, texture, water content and hedonic test (taste and colour). The A2 treatment (mung bean flour 40%) was the best treatment with physical characteristics (degree of swelling 79.88% and texture of 177.53 gf), Chemical characteristics (water content of 4.01%, ash content of 1.72% and protein content of 14.506% and sensory characteristics by scoring preferences (texture of 3.00, taste of 3.20, odor of 3.16, and colour of 3.32). r
