Abstract
The objective of this research was to analyze the effects of the water-com ratio during second soaking and particle size of corn flour on the characterisic of instant corn rice. The research was conducted in the Chemical Laboratory of Agricultural, Department of Agricultural Technology, Agricultural Faculty, Sriwijaya University, Indralaya, from May to October 2014. Factorial Completely Randomized Designed with two factors was applied on this in triplicate. The first factor was water-com ratio (100%, 125%, 150%) and the second factor was particle size of com flour (60 mesh, 80 mesh, 100 mesh). The parameters measured were moisture and ash content, texture, colour (lightness, chroma, hue), and panelist acceptance (colour, flavour, and texture). The result showed that the water-com ratio had no significant effect on the moisture content, ash content, color, texture, and time for serving com rice instant. Particle size of com flour significantly affected the moisture content, lightness, and time for serving com rice instant. The interaction of water-com ratio and particle size of com rice had no significant effect on the moisture content, ash content, color, texture, and time for serving corn rice instant. The best treatment was com rice instant which was obtained from 125% of water-com ratio and 60 mesh of com flour particle size. The characteristic of instant com rice were 36,93% of moisture content, 1.09% of ash content, 40.92 gf of texture, 61.83% of lightness, 24.37% of chroma, 74.83°of hue, time for serving 9.37 minutes, and panelist acceptance were 1.96 ofcolour, 1.72 of flavour, 2.2 of texture).
