Abstract

This research aimed to study the effects of temperature variation and drying length on the physical and chemical properties of binahong leaf tea. This research used a Factorial Completely Randomized Design (FCRD) with two factors: temperature and length of drying. The drying temperature treatment consists of three treatment levels: 400C, 500C and 600C with a drying length of 3 hours, 4 hours and 5 hours. Every treatment was repeated 3 times so 27 treatments were obtained. This research used an oven as a drying medium. The parameters observed in this research are physical characteristics (color) and chemical characteristics (water content, ash content, total phenol and antioxidant activity). The data obtained were processed using Analysis of Variance (ANOVA), the treatment that had a real effect was further tested using the Honest Real Difference Test (HRDT) 5%. The test results obtained from this research show that not all parameters are real. The physical characteristics of the readness color on the binahong leaves show no real effect. In this study, average L* was 44.80-50.75, a* 0.71-0.29, b*1.60-8.39. Chemical characteristics, water content 8,17%-5,34%, ash content 3,48%-7,23%, total phenol 62.33 mg GAE/g–44.33 mg GAE/g and antioxidants 1.298 μg/ml-2.696 μg/ml.
