Abstract
The objective of this research was to investigate pempek “Ienjer” shelf life by vacuum packaging with plastics pack (nylon composite and polyetliylene plastic). This research was done at research and industrial standarization laboratory, Palembang, which was started on May 2006 until July 2006. This research used Split plot Design with three factors and five parameters. The first factor was type of vacuum techniques ( Ai = naturally vacuum, A2 = vacuum server, and A3 = combination between naturally vacuum and vacuum server), the second factors was type of'plastics for packaging (Bj = Nylon composite plastic, B2 = Polyethylene plastic); and the third factors was type of storage [Ci = room temperature (25° C ± 0,5) and C2 = refrigeration temperature (5° C ± 0,5)]. The observed parameters comprised of qualitative one consisting of visual observation and colour change as well as quantitative parameters of total acid, protein content, and microorganism growth. Total acid and microorganism growth • increased but protein content decreased from 1 day storage until 15 days storage. Pempek could be consumed after 9 days at room temperature and at least 15 days at refrigeration temperature by using nylon composite plastics and could be consumed after 3 days at room temperature and 9 days at refrigeration temperature by using polyetliylene plastics.
