Abstract

Penelitian ini bertujuan untuk mengetahui pembuatan bubuk biji alpukat dengan metoda foam mat drying dan aplikasi produknya untuk campuran kopi dingin. Penelitian ini menggunakan rancangan acak lengkap faktorial (RALF) dengan dua faktor perlakuan, yaitu bubuk biji alpukat A1 = (5%), A2 = (10%), dan A3 (15%) dan penambahan natrium bikarbonat B1 = (0%), B2 = (1%), dan B3 = (2%), masing-masing perlakuan diulang sebanyak tiga kali. Parameter yang diamati pada penelitian ini meliputi rendemen, indeks kecoklatan, warna L*a*b (lightness, redness, yellowness), kadar air, kadar abu, aktivitas antioksidan bubuk biji alpukat , berat jenis dan uji sensori (aroma, rasa dan warna) kopi dingin campuran bubuk biji alpukat. Hasil penelitian menunjukkan bahwa bubuk biji alpukat berpengaruh nyata terhadap indeks kecoklatan, lightness, redness, yellowness, kadar abu, dan kadar air sedangkan penambahan natrium bikarbonat berpengaruh nyata terhadap randemen, berat jenis, aktivitas antioksidan dan organoleptik (rasa, warna, aroma). Nilai rata-rata keseluruhan perlakuan pada parameter indeks kecoklatan berkisar antara 0,454 ABS420nm sampai 0,638 ABS420nm; randemen berkisar antara 40,29% sampai 42,18%; ligthness berkisar antara 50,10 sampai 48,03; redness berkisar antara 11,66 sampai 11,16; yellowness berkisar antara 5,20 sampai 6,29; kadar air berkisar antara 4,62% sampai 2,95%; kadar abu berkisar antara 2,60% sampai 5,22%; aktivitas antioksidan (IC50) berkisar antara 9649μg/mL sampai 10402μg/mL.
