Abstract

This research aimed to determine effect of glacial acetic acid concentrations and pineapple fruit maturity level on the physical and chemical characteristics of nata de pina from pineapple fruit skin. This study used a Factorial Completely Randomized Design (CRD) with two treatment factors and each treatment was repeated three times. Factor A was the concentration of glacial acetic acid (v/v) (0%, 0.2%, and 0.4%), and factor B was the pineapple fruit skin based on the fruit's maturity level (100% green skin and 100% yellow skin). The parameters observed were physical parameters (yield, thickness, hardness, and whiteness degree) and chemical parameters (moisture content and C/N ratio). The results showed that the treatment of glacial acetic acid concentration had significant effects on the yield and thickness of nata de pina. The treatment of pineapple skin based on the fruit maturity level had significant effects on the yield, thickness, and moisture content of nata de pina. The interaction between the treatments had significant effects on the yield and thickness of nata de pina. The best treatment in this study was the treatment of 0.4% glacial acetic acid concentration; 100% yellow skin (A3B2) with a yield value 31.17%, thickness 5.01 mm, hardness 730.63 gf, whiteness index 50.27%, moisture content 96.31%, and C/N ratio 24.55.
