Abstract

Porang (Amorphophallus muelleri Blume) is a tuber plant with high glucomannan content. The characteristics of glucomannan in porang tubers are influenced by harvest age and planting location. This study aims to determine the effect of harvesting age and planting location on the glucomannan characteristics isolated from fresh porang tubers. This study used the Randomised Group Factorial Design (RAKF) method with two treatment factors. The treatment factors are harvesting age (1, 2, and 3 years) and planting location (Sungai Pinang and Pagar Alam). Each treatment was repeated 5 times and further tested by Duncan's Multiple Range Test. Parameters observed in this study were physical characteristics of porang tubers (weight, diameter, thickness, density and distribution of glucomannan granules), chemical characteristics of porang tubers (moisture content) and glucomannan characteristics (intrinsic viscosity, molecular weight and apparent viscosity). The results show that wet basis yields ranging from 9.78-10.70% and dry basis yields ranging from 35.04-67.10%. Harvesting age and planting location significantly influenced the increase in porang tuber size (weight, thickness, diameter), moisture content of fresh porang tubers, molecular weight, intrinsic viscosity, apparent viscosity of glukomannan. The interaction of harvesting age and planting location had a significant effect on increasing tuber size, but had no significant effect on increasing moisture content of fresh porang tubers, molecular weight, intrinsic viscosity, and apparent viscosity of glucomannan. The distribution and size of glucomannan granules in the centre to the inside of the tuber increased with increasing age. This study shows that porang tubers produce optimal glucomannan at the age of 2 years with environmental conditions such as in Pagar Alam, namely an altitude of 280 masl, rainfall of 5.40-234.5 mm3 and ambient temperature ranging from 16-30 ℃. The glucomannan granules have intrinsic viscosity of 3x103 ml/g, apparent viscosity of 45,620 cps and molecular weight of 8.7x104 g/mol.
