Abstract

This thesis is entitled "Development of HAR Martabak Culinary in Palembang in 2000-2017 (Contribution of Subject Material to Local Wisdom.) The problem raised by the author is how the development of the culinary martabak HAR in Palembang at this time which has been divided into three generations that are seen in terms of socio-economic for the life of restaurant owners and their employees. The method used in this study is a historical method, namely a systematic framework for gathering historical sources, by giving criticism and judgment in completing facts, to obtain the truth and present it in written form. In this study using an anthropological approach and economic approach. The purpose of this study is to explain the history of the beginning of the founding of this martabak HAR in Palembang to its development in 2017 which includes work processes, equipment used, branches that have been established, and how to process marketing to consumers from one generation to the next generation, while for the social and economic aspects that have been observed include the lives of owners and workers in the process of their daily activities. The results of data analysis show that the most dominant development is in the beginning of 2010 until now because with the development of an increasingly advanced era, the process of adjusting to the changes also continues to increase.
