Abstract
This study aims to determine the formulation concentration of porang glucomannan and glycerol plasticizer to produce edible film with the best characteristics. This research was conducted from December 2023 to March 2024 at the Chemistry, Processing and Sensory Laboratory of Agricultural Products, Department of Agricultural Technology, Sriwijaya University, Indralaya and Chemistry Laboratory, Department of Chemical Engineering, Sriwijaya State Polytechnic, Palembang. This study used a non-factorial Completely Randomized Design (CRD) consisting of 9 treatments, namely 1% glucomannan sol + 1% glycerol, 1% glucomannan sol + 2% glycerol, 1% glucomannan sol + 3% glycerol, 2% glucomannan sol + 1% glycerol, 2% glucomannan sol + 2% glycerol, 2% glucomannan sol + 3% glycerol, 3% glucomannan sol + 1% glycerol, 3% glucomannan sol + 2% glycerol and 3% glucomannan sol + 3% glycerol. Each treatment was repeated 3 times. Data were processed using analysis of variance, treatments that had a significant effect were further tested using the Duncan's Real Distance Test (DRDT) at the 5% level. Parameters observed were thickness, tensile strength, elasticity, percent elongation, compressive strength, water vapor transmission rate and water absorption test. The results showed that the concentration of glucomannan and glycerol had a significant effect on increasing the thickness, compressive strength, water resistance, tensile strength, elasticity and water vapor transmission rate of edible film. However, there was no significant effect on the percent elongation of edible film. The best treatment in this study was 3% glucomannan sol : 1% glycerol treatment which had a thickness value of 0.217 mm, compressive strength of 7.82 gf, water absorption of 93.31%, tensile strength of 0.78 MPa, percent elongation of 25.83%, elasticity of 0.032 MPa, and water vapor transmission rate of 12.38 g/day-1.m-2.
