Abstract

YUNIA. The Effect of Nutrient Calcium (Ca) on the Growth and Nutritional Content as well Organoleptic Test of Pakcoy Green Mustard (Brassica rapa L) Cultivated Hydroponic (Supervised by FITRA GUSTIAR). Hidden hunger is a condition in which the human body lacks nutrients and minerals. This deficiency can occur when the quality of the food consumed does not meet nutritional needs, so that the body lacks micronutrients for growth and development. The low calcium intake of the Indonesian people is one of the causes of the high risk of osteoporosis. This study aims to determine the content of important nutrients and organoleptic tests on pakcoy mustard green (Brassica rapa L.) resulting from Ca biofortification cultivated using the hydroponic method. This study used a descriptive test with 2 treatments and 4 replications, consisting of 0 ppm (P0) treatment and 300 ppm (P1) calcium treatment of pakcoy mustard green plants. The parameters observed included plant height, number of leaves, plant wet weight, plant dry weight, calcium content, ash content, crude fiber and organoleptic tests with components of assessment of color, taste, preference, and texture. The research treatment did not affect plant growth, seen from the height and number of pakcoy mustard plant with 300 ppm calcium treatment, only a slight decrease from the 0 ppm pakcoy mustard plant, but it affected plant production seen from the wet weight and dry weight of 0 ppm pakcoy mustard plants which have a higher weight than the 300 ppm. Giving a calcium concentration of 300 ppm increased the calcium content, vitamin C content, ash content, and crude fiber in pakcoy mustard green. ietary fiber in mustard greens. The assessment of the organoleptic test results showed that pakcoy mustard greens with 300 ppm calcium treatment were light green in color, had a sweet taste, had a crunchy texture, and were preferred by panelists. So the pakcoy mustard green plants that get the addition of 300 ppm of calcium can be accepted and liked by the public to meet their calcium needs. Hidden hunger atau kelaparan yang tersembunyi adalah kondisi tubuh manusia yang kekurangan zat gizi dan mineral. Kekurangan ini bisa terjadi ketika kualitas makanan yang dikonsumsi tidak memenuhi kebutuhan nutrisi, sehingga tubuh kurang mikronutrien untuk pertumbuhan dan perkembangan. Penelitian ini bertujuan untuk mengetahui kandungan zat gizi penting dan uji organoleptik pada tanaman sawi pakcoy hasil biofortifikasi Ca yang dibudidayakan dengan metode hidroponik. Penelitian ini menggunakan uji deskriptif dengan 2 perlakuan dan 4 ulangan, terdiri dari perlakuan 0 ppm (P0) dan perlakuan 300 ppm (P1) kalsium terhadap tanaman sawi pakcoy. Parameter yang diamati meliputi tinggi tanaman, jumlah daun, berat basah tanaman, berat kering tanaman, kandungan kalsium, kadar abu, serat kasar, dan uji organoleptik dengan komponen penilaian warna, rasa, kesukaan, dan tekstur. Perlakuan penelitian tidak mempengaruhi pertumbuhan tanaman, terlihat dari tinggi tanaman dan jumlah daun sawi pakcoy, dengan perlakuan kalsium 300 ppm hanya mengalami sedikit penurunan dari tanaman sawi 0 ppm, namun mempengaruhi produksi tanaman terlihat dari berat basah dan berat kering tanaman sawi 0 ppm memiliki berat yang lebih tinggi dibandingkan tanaman sawi 300 ppm. Pemberian konsentrasi kalsium 300 ppm meningkatkan kandungan kalsium, kandungan vitamin C, kadar abu, dan serat kasar pada tanaman sawi. Penilaian hasil uji organoleptik menunjukan sawi pakcoy dengan perlakuan kalsium 300 ppm berwarna hijau muda, memiliki rasa manis, bertekstur renyah, dan lebih disukai panelis. Jadi tanaman sawi pakcoy yang mendapat penambahan kalsium 300 ppm dapat diterima dan disukai masyarakat untuk memenuhi kebutuhan kalsium. Kata Kunci : hidroponik, kalsium (Ca), sawi pakcoy
