Abstract
The aim of the research was to level of the freshness for the mackerel {Rastrelliger kanagurta) and sardines {Sardinella sirm) at Jakabaring Central Market in Palembang. This research has done since December 2006 at Experiment and Quality Supervision of Fishery Palembang’s output Laboratory. The research we expect it can give us such a information to the society about the level of freshness for sea fish, especially for mackerel and sardines. So that they know whether the fish could be consumed or not. The parameters that was examined in this research are the determination for the value of TVB {Total Volatile Bases), the value of TMA {Trimethylamine), the value of TPC {Total Plate Count), and also organoleptics test (eyes, gills, meat, and the consistency). The research used two methods, they are interview and laboratory analyze. In laboratory analyze, could make the test subjectically and objectically for the level of freshness. Analyze the data that all have already get descriptically with the comparison between that data and also Standard data. The research has done three times for three weeks and three replications for each treatment. The research that in each trial we can considered that only the trial in the second week stated “the fish was unfresh” because the average of the result can not fulfil the Standard of fish freshness. The average of the result in the second week is for mackerel the organoleptic test 6.2, TPC 8.1 x 105, TVB 46 mg N/100 gr, and TMA 3.4 mg N/100 gr. The comparison between the trial in the first and third week informed that sardines were considered fresh and decent to be consumed because they did not have more value for the Standard that is decided for fresh fish. i
