Abstract
Sugarcane ice is a beverage that the possibility of being contaminated by bacteria such as E.coli is more from the processing stage to the final stage of serving. The purpose of this study was to analyse the hygiene and sanitation and E.coli content of sugarcane ice in 16 Ilir Market Palembang. The method used in this research is descriptive qualitative through observational study. There were 12 informants selected through purposive sampling and 8 samples consisting of 4 samples of sugarcane ice and 4 samples of water used by the handlers. Laboratory results on sugarcane ice found that 3 out of 4 samples tested were positive for E.coli with results of 6.9 MPN/100 ml and 1.1 MPN/100 ml. As for the water used by the handlers, all of them were detected to be negative for E.coli. The results showed that all handlers did not wash their hands with soap and running water and all handlers did not use special tools to take sugar cane raw materials. 3 out of 4 handlers still use water containers from disposable plastic containers, 2 handlers do not have trash bins, also 3 handlers have open sugarcane storage containers. The conclusion obtained is that the sanitary hygiene of sugar cane ice is still not good and E.coli bacteria were found in sugar cane ice drinks. The suggestion of this research is that the handlers should be able to maintain personal hygiene, the cleanliness of the processing equipment used, and the cleanliness of the environment around the selling place to keep it clean.
