Abstract

Food handler workers have an important role in maintaining food safety through hygiene and sanitation efforts. The implementation of food safety in the informal sector which has not been optimally implemented due to lack of knowledge, inadequate facilities and unsafe work environments is at risk of food contamination. The aim of this study is to analyze the relationship between food handler hygiene and clean water with the presence of Escherichia coli bacteria in food in the floating restaurants. The research method used was quantitative with a cross-sectional design, with sample of 37 food handlers and 7 food samples, data analyze with chi-square test. The results show that 4 (57.1%) of food samples are positive for Escherichia coli bacteria and 3 (42.9%) food samples are negative. Furthermore, based on the results of the chi square test, the variables which show a relationship with the presence of Escherichia coli in food are knowledge (p = 0.005), PPE (p = 0.032), personal hygiene (p = 0.014) and clean water facilities (p = 0.005). Meanwhile, the variable which does not show a relationship is health checks (p = 0.252). It is expected that business owners can take food hygiene and sanitation courses at certified institutions, conduct health checks on workers at the nearest health facility, provide PPE for workers carried out by business owners, and use clean water according to requirements. In addition, it is expected that food handlers can be more disciplined in implementing hygiene and sanitation when processing food.
