Abstract

Background: Candy is a processed food in the form of a solid and if consumed excessively it will reduce the salivary pH which is one of the factors causing caries. This decrease occurs due to the activity of acid-producing bacteria in the oral cavity. Preventing a decrease in salivary pH can be done by adding gambir and xylitol to candy. Gambir is a herbal ingredient containing catechins and tannins which act as antibacterial agents. Xylitol is a natural ingredient that can inhibit the growth of acid-producing bacteria in the oral cavity. This study aims to determine the effect of consuming gambir candy sweetened with sucrose and candy sweetened with xylitol on salivary pH. Method: Experimental research with a pre-post test control group design approach consisting of a gambir candy group sweetened with sucrose and a group of sweets sweetened with xylitol. The subject of this study were 32 students of BKGM FK UNSRI. Sample of 5 ml saliva was taken before and after consuming candy using the spitting method. Salivary pH was measured with a digital pH meter. The data were analyzed by paired t-test and unpaired t-test. Results: This study showed that after consuming gambir candy sweetened with sucrose and candy sweetened with xylitol, there was a significant increase in the average salivary pH compared to before consuming the candy (p<0.05). Candy sweetened with xylitol showed a higher increase in salivary pH and was significantly different from gambir candy with the addition of sucrose (p<0.05). Conclusion: Consuming gambir candy with sucrose sweetener and candy with xylitol sweetener has an effect in maintaining salivary pH within normal limits.
