Abstract
This study aims to determine the effectiveness of soursop leaves and chitosan that can be used as anti-fly and antibacterial on salted fish. Quantitative research methods that are analyzed descriptively. The research was conducted in a laboratory experiment with 4 levels of treatment and 3 replicates. The data obtained in the color test was carried out using parametric statistics, namely analysis of variance. While the extract yield, humidity and temperature measurements, measurement of the number of flies, total plate count (TPC) test and coliform test were analyzed descriptively with laboratory experimental methods. The treatment used is the difference in the concentration of soursop leaf extract with the addition of chitosan sprayed on salted fish, namely A0 (salted fish made without treatment, as a control), A1 (soursop leaf extract + chitosan 0.5%), A2 (soursop leaf extract + chitosan 1.0%) and A3 (soursop leaf extract + 1.5%). The parameters used in this study were temperature and humidity measurements, the number of flies that landed during the drying process, decay bacteria test, coliform bacteria test and color test. The data from the results showed that the number of flies for 3 days in the drying process ranged from 33-182 flies where the highest number of flies landed on the control salted fish and the least number of flies landed on salted fish sprayed with soursop leaf extract with the addition of 1.5% chitosan, identification of decaying bacteria ranged from 3.25 log CFU/g to 3.09 log CFU/g the highest number of colonies of decaying bacteria in salted fish without treatment and the lowest number of colonies of decaying bacteria in salted fish sprayed with 20% soursop leaf extract with the addition of 1.5% chitosan. 5%, identification of coliform bacteria in samples without treatment that did not meet the Standard Plate Count (SPC) and no coliform bacteria were found in samples sprayed with 20% soursop leaf extract with the addition of chitosan 0.5%, 1.0%, 1.5%, the resulting color test stated that the total color difference had no significant effect on salted fish sprayed with soursop leaf extract with the addition of chitosan 0.5%, 1.0%, 1.5%.
