Abstract
Food development, especially products focusing on the role of gut microbiota, has emerged over time such as the modification of fermented beverages. The use of probiotics, prebiotics and synbiotics is being increasingly explored as a safe, effective, and straightforward options for the prevention and treatment of metabolic disorders, positioning synbiotics as a valuable nutritional strategy in managing these conditions. Ambon lumut banana (Musa accuminata colla) was used as potential prebiotic and the incorporation Lactobacillus acidophilus, Lactobacillus bulgaricus, and Bifidobacterium would be fermented into a synbiotic beverage using milk as a medium would change the physical and chemical properties of fermented beverages, including nutrients. Therefore, this research aimed to evaluate the chemical properties of each banana milk sinbiotic formulation to assess the established quality standards. This quantitative research used experimental design with RAL (Completely Randomized Design) pattern with 3 treatments. The treatment in this research was the difference in composition of ambon lumut banana (Musa accuminata colla) and starter namely F1 ( 15,3% : 46%), F2 (31% : 31%), and F3 (46% : 15,3%). The results indicated significant differences in ash content (p value = 0,018), water content (p value = 0,005), total carbohydrates (p value = 0,008), total fat (p value = 0,001) and total energy (p value = 0,003). In contrast, in total protein (p value = 0,180) there was no significant difference. Based on proximate analysis, F3 (46% ambon lumut banana : 15,3% starter) was obtained as the selected banana milk sinbiotic formulation. The recommendation for further researchers are total dissolved solid analysis to see the remaining lactose content and analyze the effect of the length of fermentation time on macronutrients.
