Abstract
Crackers and fish crackers are traditional foods of the people of South Sumatra. The problem faced is that the drying process is still conventional, namely utilizing direct sunlight which tends to be unstable and changing. This study aims to produce a multifunctional portable kemplang dryer (solar and electric) that can dry kemplang faster, hygienically, and with quality. The stages of the research process carried out include Literature Study, Design, Manufacturing Process, Testing, and Data Collection. The design of the dryer made can accommodate 1000 pieces of kemplang in one drying. The technical data of the machine made is using hollow iron with a thickness of 2 mm, this kemplang dryer has dimensions of length × width × height, namely 200 cm × 80 cm × 200 cm. The results of this study are that the kemplang drying process is more effective using electricity than sunlight because the drying process is faster. The advantages of this multifunctional portable kemplang dryer are that the materials used are relatively durable, easy to move, the drying process is relatively fast, the drying process is more hygienic, easy to use, and can carry out the drying process in a conventional way (can use the sun and can use heating or electricity).
