Abstract

Organic waste is the residual result of human activity that is easily decomposed but unused, such as fruit peel waste, which can cause ecological pollution. Processing organic waste into fermented products from Siamese orange peel (Citrus nobilis L.) can maintain ecological quality and has the potential as an antibacterial agent because it contains inhibitory chemical compounds. The fermentation of the peel can form organic acids, alcohol, and secondary metabolite compounds, so it can can make it an antibacterial agent that inhibits bacterial growth. This study aims to determine the characteristics of organic waste fermentation which includes pH, alcohol, acetic acid, and other chemical compounds, and to determine the antibacterial process of Siamese orange peel waste fermentation against Escherichia coli and Staphylococcus aureus. The test methods are antibacterial activity test, thin layer chromatography (TLC) test, and bioautography test. This research on the two bacteria can be inhibited by bacterial agents produced by the fermentation of Siamese orange peel. The fermentation of Siamese orange peel waste (Citrus nobilis L.) has a pH of 3.4; acetic acid with a level of 4.92%; alcohol content of 5.81% and chemical compounds including flavonoids, alkaloids, and tannins. Chemical compounds can be produced by the metabolism of local microorganisms (MOL), which utilize the substrate. Antibacterial activity using the agar diffusion method resulted in an inhibition zone diameter of 4.67 mm against Escherichia coli and 6.16 mm against Staphylococcus aureus. Bioautography test showed the presence of an inhibition zone on the stain with the tannin compound group. This research is an effort to develop environmentally friendly natural antibacterial materials more precisely. Keywords: Organic Waste, Fermentation, Siamese Orange Peel, Antibacterial.
