Abstract
The objective of the study was to investigate the effect of adding eggs, gambir extract and tapioca starch on Chemical, and organoleptic cassava leaves jerky. The experiment was conducted in the characteristics of physical, March 2011 untill July 2011 in the Laboratory of Agricultural Chemistry, and Laboratory of Sensory Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, Indralaya. This research was designed a Factorial Completely Randomized Design with two treatments and three replications for each treatment. Factor of A was the addition of eggs (0%, 10% and 20%) and gambier extract (0%, 1.5% and 3%). Factor of B was the concentration factor addition of tapioca starch (0%, 15% and 30%). Parameters were the physical properties (hardness and color), Chemical (soluble protein content, crude fiber content, moisture content, ash content, antioxidant properties, vitamin C, levels hidrosianida (HCN) and chlorophyll), and sensory properties with using hedonic test such as : color, flavor, texture and taste. The results showed that the addition of eggs, gambier extract and tapioca starch had significant effects on physical characteristics, Chemical, and organoleptics cassava leaves jerky. The best treatment based on physically and chemically was A3B1 (eggs 20%, gambier extracts 3%, and tapioca starch 0%). That had some values of fiinctional food Chemical such as : 132.2 mg/100 g vitamin C, 39.91% antioxidant capacity, 6.95% crude fiber, and 440.84 mg/mL chlorophyl content. The best treatment based on acceptable of organoleptic was A2B3 (eggs 10%, gambier extracts 1.5%, and tapioca starch 30%) with scores were 3.04 for aroma, 2.96 for taste and 3.12 for texture.
