Abstract
The objective of the research was to observe the physical, Chemical and sensory characteristics of ice cream with different harvest time of Cucumis melo L. fruit and formulation of coconut milk and milk. The research was conducted at Chemical Laboratory of Agricultural Product, Agricultural Technology Department, Agricultural Faculty, Sriwijaya University, from March 2011 to July 2011. The research used Factorial Block Randomized Design with two factor treatments and three replications. A factor was the harvest time of Cucumis melo L. (75-85 days after planted and 90-100 days after planted) and B was the formulation of coconut milk and milk addition (90%: 10%, 80%: 20%, 70%: 30 %). The parameters were physical characteristics (viscosity, colour measurement, melting time and over run), Chemical characteristics (potassium content, protein content, total sugar content and fat content), and sensory test (taste, odor, texture and colour). The results showed that the harvest time of Cucumis melo L. had significant effect on the viscosity, lightness, hue, potassium content, and protein content. The formulation of coconut milk and milk had significant effect on the viscosity, melting time, over run, lightness, and total sugar content. AiB3 treatment (Cucumis melo L. 75-85 days after planted, formulation of coconut milk 70% and milk 30%) was the best treatment with the viscosity 112.0 dPoise, 76.23% lightness, chroma 21.33%, hue 91.770°, melting time 14.65 minutes, over run 27.81%, potassium 0.80 g/L, protein content 4.79%, total sugar content 29.97%, fat content 15,38%, and sensory characteristics by scoring preferences (taste 3.24, odor 3.08, texture 3.20, and colour of 3.08).
