Abstract

The objective of this research was to study affect of withering and drying the processing results of tea leaf of agarwood (Aguilaria malaccensis) to phsycal characteristics, Chemical, and organoleptic properties. This research was conducted at the Chemical, Department of Agricultural Technology, Agricultural Faculty, Sriwijaya University, Indralaya, begun from July until Desember 2012. The research was arranged in completely randomized design non-factorial with five treatments with three replicatins for each treatment. Treatments are A (withering dark room), B (withering and drying), C (withering low temperature), D process on (withering, blanching, and drying) and E (withering, fermentation and drying). The parameters observed were yield, moisture content, color, ash content, water activity, antioxidants, total phenols, tannins, and a hedonic test. The results showed that drying has significant effect on the yield, ash content, water activity, antioxidants, total phenols, tannins, and a hedonic test but does not significantly affect on the moishire content. The best treatment based on Chemical variables was C with antioxidant (IC5o) of 0.97 mg/ mL, tannins of 3.93%, hue at 95°, chroma of 17.30%, ash content of 4.28 %, and the yield of 45.6%. Treatment D has total phenol of 138.39 mg/L. Treatment E has lightness of 55,2 %, while treatment A with activity water of 0.76. The best treatment based on organoleptic observation was B since it was the most favored by panelists based on hedonic test.
