Abstract

The objective of the research was to determine the effects of breadfruit flour and young coconut flour addition on physical, Chemical and sensory characterististics of bangkit cookies. The research was conducted at the Laboratory of Agricultural Chemistry Product, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, from February to May 2012. A non factorial completely randomized design was used in this research. One factor was studied, namely addition of breadfruit flour and young coconut flour with 5 levels . They were 50:0, 37.5:12.5, 25:25, 12.5:37.5 and 0:50 per cent, respectively. All treatment were repeated three times. Observed parameters were physical (texture and color), Chemical (moisture content, ash content and dissoluble fiber content) and sensory characteristics (hedonic test, including appearance, texture, aroma and flavor). The results showed that addition of breadfruit flour and young coconut flour had significant effects on physical (color and texture), Chemical (moisture content, ash content and dissoluble fiber content) and sensory characteristics (appearance, texture, aroma and flavour). The best product was bangkit cookies treated with 25:25 per cent of breadfruit flour and young coconut flour (A3) with the following characteristics: texture 608.9 gf; lightness 66.03%, chroma 29.3% and hue 64.03°; moisture content 3.48%, ash content 1.02% and dissoluble fiber content 1.85% . From sensory test, treatment A2 was the most preferred treatment. This was shown by texture, aroma appearance, and flavour scores of 2.92, 2.92, 2.76 and 2.92 respectively.
