Abstract
The objective of this research was to determine the effects of kinds of stabilizer and their concentrations on characteristics of kunci citrus syrup. This research was conducted al the Laboratory of Agricultural Chemistry, Department of Agricultural Technology, Faculty of Agriculture, University of Sriwijaya Indralaya, from July 2012 to Maret 2013. This sludy used factorial completely randomized design with two factors and three replications. The factors were kinds of stabilizer (Carboxy methyl cellulose (CMC), Gum Arabic and combination of CMC and Gum Arabic) and concentration of stabilizer (0.5, 1 and 1.5%). Observed parameters were physical (color and stability), Chemical (vitamin C, antioxidant activity, total dissolved solids, total acid and reducing sugar) and sensory characteristics using hedonic test (color, aroma, taste, and viscosity). The results showed that the kinds of stabilizer significantly affected lightness, stability at day 10 and 20, whereas stabilizer concentration significantly affected stability at day 10 and 20. The interaction of stabilizer kinds and their concentration showed significant effects on the hue, total acid, stability at day 10 and 20. Kunci citrus syrup A3B1 (CMC and gum arabic 0.5%) was found to be the best treatment with the following characteristics: total sugars of 64.73 °Brix, vitamin C of 36.73 mg/IOO mL, total acid of 6.12 %, reducing sugar of 8.08 mg/ml, antioxidants activity of 2.75 mg/mL IC50, stability of 100 %, lightness of 28.80 %, chroma of 4.07 %, hue of 98.83°, and sensory characteristics of color, viscosity, flavor and aroma with the following scores: 2.88, 2.92, 2.84, dan 2.72.
