Abstract
The objective of research was to determine effect sliced thickness and temperature of vacuum frying on the right to produced chips pumpkin with panelists preferred characteristics. It was carried out at the Laboratory of Agricultural Chemistry, Departement of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, Indralaya in October 2012 until June 2013. The research used a factorial completely randomized design with two treatment factors and three replications. The observed treatment factor was sliced thickness (Ai: 1 mm, A2: 2 mm, A3: 3 mm) and temperature of vacuum frying (Bi: 80 °C, B2: 90°C dan B3: 100°C). Observed parameters were physical (yield, texture and color), Chemical (moisture, ash, fat, crude fiber content, carotene levels, and antioxidant activity) and sensory characteristics with hedonic test (color, flavor, crispness and flavor). The results showed that sliced thickness had significant effect on texture, yield, and moisture content of pumpkin chips. Frying temperature had significant effect on the lightness, chrome, texture, yield and moisture content of pumpkin chips. The interaction between the sliced thikness of frying temperature had significant effect on the moisture content of pumpkin chips. The treatment A3B3 (chips with 3 mm of sliced thickness and frying temperature 100°C) was the preferred treatment of sensory panelists based on hedonic test (aroma, flavor,taste and texture), which had a value of fat content 21.90%, crude fiber content 1.58%, carotene levels 16. 49 ppm, and antioxidant activity 12.92 mg/ mLICso.
