Abstract
This study aims to determine changes in some characteristics of VCO purified using bentonite adsorbent. The VCO production process was carried out through enzymatic method using papain enzyme to maintain oil quality. Furthermore, the purification process was carried out using various bentonite concentrations (3%, 5%, and 10%) to adsorb residual protein, water, and other impurity compounds. This research involved six main tests, namely the free fatty acid content test, peroxide number, specific gravity, water content, viscosity test and organoleptic test. The results showed that 10% bentonite concentration improved the quality of VCO to meet the Indonesian National Standard (FFA = 0.174%, peroxide value = 0.99 mEq/kg, density = 0.4524 gr/mL, moisture content = 0.0026% and viscosity = 10.47cP). Organoleptic tests showed an improvement in the aroma, color, and taste of the VCO produced. Thus, the use of activated bentonite is effective in improving the quality of VCO.
