Abstract
Embem fruit (Mangifera odorata griff.) is a mango-like fruit that has a low selling value during the main harvest. The innovation of embem fruit processing is that it can be processed into jam, to consume jam more practically, it can be further processed into sheet jam. This study aims to analyze the quality of embem fruit (Mangifera odorata griff.) sheet jam in various additions of sugar concentration. This research used a non-factorial Completely Randomized Design (CRD) method consisting of 6 treatments. Each treatment was repeated 3 times. Treatment factors include the addition of sugar with the following concentration: of 40%, 45%, 50%, 55%, 60% and 65%. Parameters observed include physical characteristic (hardness and tensile strength), chemical characteristic (moisture content, ash content, pH, total sugar value) and sensory characteristic using hedonic test (texture and flavour). The results showed that the addition of sugar had a significant effect on the hedonic test of texture, hardness, tensile strength, moisture content, ash content, pH, and total sugar value. But had no significant effect on hedonic test (taste). Embem fruit sheet jam with A3 (50% sugar) was the best treatment selected based on the research objectives.
