Abstract

The smoked fish business is a business sector that has great potential in Rantau Bayur Village, Rantau Bayur District, Banyuasin Regency. The development of the smoked fish processing home industry in Rantau Bayur Village has recorded rapid growth in recent years. The aim of this research is to: 1) To find out the process of processing smoked fish in Rantau Bayur Village. 2) To find out the obstacles faced and the efforts made to overcome obstacles in the smoked fish business in Rantau Bayur Village. 3) To analyze how much added value is obtained from the home industry scale smoked fish food business in Rantau Bayur Village. Data collection was carried out in December 2023. The method used in this research is the case study method. The data obtained consists of primary data and secondary data. The research results show that 1) The smoked fish processing process in Rantau Bayur Village is still relatively simple. 2) The obstacles that exist in the smoked fish processing business in Rantau Bayur Village are the processing process which still uses simple tools, limited capital to increase the amount of smoked fish production, the geographical location of the village which causes a lack of infrastructure such as roads and bridges which hinders the sale and purchase of fish smoke in Rantau Bayur Village, and marketing is still limited. 3) The added value of smoked lais fish is higher, namely IDR 27,379.00 with a ratio of 50.70%. According to Kipdiyah (2013) a value added ratio > 40% added value is said to be high. Meanwhile, the added value of smoked baung fish is IDR 16,379.00 with a ratio of 34.12%. According to Kipdiyah (2013) a value added ratio of 15-40% added value can be said to be moderate.
