Abstract
The objective of this research was to determine the ability of canna (Canna edulis Kerr) starch edible film on shelf life madu mongso. The research was conducted at the Chemical Laboratory of Agriculture, Departement of Agricalture Technology, Agricultural Faculty, Sriwijaya University, Indralaya, from March 2016 to July 2016. The research used a Factorial Randomized Completely Design with three factors and three replications. The first factor was the types of packaging (edible film with and without surimi), the second factor was storage temperatures (20 ± 2˚C, 30 ± 2˚C and 40 ± 2˚C), and the third factor was storage times (0 days, 7 days, 14 days, 21 days and 28 days). The observed parameters were water content, free fatty acids, texture and sugar content. Shelflife of madu mongso was determined by using the accelerated shelf life test (ASLT) method with Arrhenius approach based on the parameters having the lowest activation energy. The results showed that the types of edible film had significant effect on moisture content and texture. Storage temperature had significant effect on moisture content, free fatty acid, texture. Storage times had significant effect on moisture content, free fatty acid, texture and sugar content. The interaction the type of packaging edible film and storage times had significant effect on free fatty acid. The shelf-life of madu mongso packaged with edible film with surimi had a shelf-life 30 days, 24 days and 20 days stored at a temperature of 20˚C, 30˚C, dan 40˚C with the activation energy of 2,853.882 cal/mol. The shelf-life of madu mongso packaged with edible film without surimi had a selflife 27 days, 23 days and 20 days stored at a temperature of 20˚C, 30˚C, and 40˚C with activation energy of 3,612.534 cal/mol.
