Abstract

The research aim was to determine the effects of drying method and duration of gelatinized corn rice on characteristics of cooked instant corn rice. A Factorial randomized group design was used, consisted of two factors and carried out in triplicates. The first factor was drying (sun drying, solar dryer, oven and cabinet oven) and the second one was duration of drying (12 and 14 hours). The following parameters were observed, including color (lightness, redness and yellowness) and water content of both corn rice and cooked corn rice, as well as texture, water absorption capacity, serving time, ash content, dietary fiber content and sensory characteristics (color, texture, flavor and taste) of cooked corn rice. The results revealed that drying method had significant effects on lightness and water content (corn rice and cooked corn rice) and water absorbing capacity, whereas drying duration showed significant lightness and water content of corn rice and cooked corn rice. Furhermore, interaction of the two factors had significant effects on yellowness (corn rice), redness (cooked corn rice), water absorption capacity and sensory characteristics (color, texture and taste) of cooked corn rice. The best treatment was I3T1 (drying with oven for 12 hours) with the following characteristics: water content 5.23 and 4.92% (for corn rice and cooked corn rice, respectively), ash content 0.84, dietary fiber content 6.23%, texture 24.00 gf, lightness 58.80%, redness 9.30%, yellowness 20.20% and average scores 2.28, 2.08, 1.96 and 2.20 for color, taste, texture and flavor, respectively (for cooked corn rice).
