Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh jenis jeruk dan Cara ekstraksi terhadap karakteristik sari buah jeruk. Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial (RALF) terdiri dari dua perlakuan yang terdiri dari perlakuan pertama jenis jeruk (medan, peras, kunci) dan perlakuan kedua metode pemerasan (manual dan slow juiser). Setiap kombinasi perlakuan diulangi sebanyak 3 kali. Parameter yang diamati meliputi pH, TPT, vitamin C, rendemen, warna. Hasil penelitian menunjukkan bahwa jenis jeruk berpengaruh nyata terhadap pH, total padatan terlarut, vitamin C, rendemen, lightness (L*), greenness (-a*) yellowness (b*); metode pemerasan berpengaruh nyata terhadap nilai vitamin C, rendemen, lightness (L*), greenness (-a*) yellowness (b*); interaksi jenis jeruk dan metode pemerasan berpengaruh nyata terhadap nilai TPT dan greenness (-a*). Hasil terbaik ada pada perlakuan A1B1 (jeruk medan dengan metode pemerasan slow juiser)
