Abstract

The Objectives of this study are (1) to calculate the cost, revenues, and income of pempek business in Central Pempek Village 26 Ilir, Palembang City. (2) Calculating the profit or added value after the fish is processed into pempek. This research was conducted in Central Pempek Village, Palembang City. Data collection was carried out in Agustus 2024. The research employs a quantitative descriptive method with a case study approach focused on small- to medium-scale pempek businesses.The method used is a survey method which collects information from a sample by asking through a questionnaire or other aids that contain questions related to research. The sampling method used in this study is the sample census method where all sampling units in the population are sampled. The data collected in this study are primary data and secondary data. The results of this study indicate that on average raw materials are obtained from the 26 Ilir market. The process of processing fish into pempek goes through several production stages, including cleaning the snapper as raw material, grinding the snapper, producing lenjer pempek, cooling the lenjer pempek, and packaging the final product. In a month the processing of pempek is carried out 17 times of production, in one production it requires 10 kg of snapper fish. The basic price obtained in research on pempek processing in Central Pempek Village, Palembang City is Rp. 53.292,00. The added value ratio obtained in the processing of fish into pempek is 35,471% so that based on the criteria for determining the value added ratio, the processing of pempek produces moderate added value, namely between 15% -40%.
